Cucumber Dill Rotisserie Chicken Salad

From Peanut Butter Fingers

This is protein-packed chicken salad is a major easy-button I recommend to all my clients! Greek yogurt is swapped for mayonnaise for a lower calorie, lower fat option. (I use a coconut milk greek yogurt for a dairy-free option).

I like to keep this in my fridge and grab a few fork-fulls as a high protein snack, serve in butter lettuce for a wrap or over a bed of spinach.

Baked Kale Salad with Crispy Quinoa

From Justine Doiron

Never thought I’d eat a “warm-salad”, but this salad from Justine Doiron quickly changed my mind. Perfect for winter when you don’t want anything cold and raw, this baked salad is savory, comforting and packed with fiber.

I throw a chicken breast in my air-fryer then shred it and throw it on top to make it a high-protein meal.

Roasted Butternut Squash and Blackberry Harvest Salad

From Fit Foodie Finds

In this salad, you “massage” the kale to help break down the fibers, making it easier to chew and digest. Not a raw kale fan? Spinach and arugula would be awesome swaps here as well!

To find the biggest, juiciest, sweetest blackberries, make this salad in September when they’re in season.

Easy button: save yourself the hassle of peeling and cutting a butternut squash (the worst)- buy precut cubes from the store if they have them!
