Mediterranean Lemon Chicken Soup

This soup is a low-carb, low-calorie alternative to a well-known Greek favorite: chicken lemon rice soup. It’s incredibly tasty and packed with protein and veggies. I added shredded carrots along with the zucchini to make it more authentic.

My easy-button tips: Use the grater setting on your food processor if you have one, and opt for frozen cauliflower rice instead of making your own

 

Paleo Chicken and Dumpling Soup

A bit of a labor-of-love, this soup is totally worth the little bit of extra effort to make your own grain-free, paleo dumplings. It’s cozy, nourishing and perfect for a winter day.

My pro tip: make the dumpling batter FIRST, then store it in the freezer until it’s time to form them and drop them in the soup. They’re easier to work with and stay together better in the hot broth.
